By the end of September, Fude + Serrahn, very much known as one of the major German milk traders have finally entered large-scale milk processing. At their plant in Gransee, Germany a new drying facility has been taken officially in operation. IDM was there, naturally.Fude + Serrahn (fs-milchprodukte.de) have acquired the Gransee plant in 2006 from bankrupt Parmalat. Since then, F+S have increased capacities by heavy investment. In a first stage, €10m were spent for modernization and increase of processing capacities, the building of an acid curd cheese production and a UHT plant. Only few years later, in early 2009, F+S decided to build a drying plant in Gransee. A total of €25m was invested and the result is an absolute state-of-the-art milk drying facility.There was no general contractor. The “wet part” was supplied by Tetra Pak Processing. The “dry part” was done by Derichs Verfahrenstechnik while the spray dryer was constructed and built by Lübbers Anlagen- und Umwelttechnik. The bagging line was supplied by Chronos BTH and architecture and building management was done by Anton Heuel (who has built many a dairy plant, especially in the German speaking part of Europe). EvaporationTetra Pak’s part started at the milk reception where an additional reception line was installed supplementing the 2 existing lines. The storage for raw milk and concentrate was automated and a new storage for pre-concentrate with 6 tanks, each holding 150,00 litres, was added.Core of the installation was a Tetra Magna evaporator consisting of a pre-evaporator with a capacity of 51,000 kg skim milk (9 % dry matter) per hour and two concentrators with a capacity of 12,000 kg, each, for concentrating skim milk form 36% to 50% dry matter.Heating from 85 0C to 110 0C is done by direct steam injection. After 12 hours, F+S switch from one to the other concentrators. One is starting a CIP process while the other takes over production in a continuous run.A new CIP batch system was installed as well. The whole operation is managed from the Tetra Plant Master platform that features full retraceability of the product flow. A “Energy Manager” monitors and documents the usage of steam and electric energy so that F+S are able to calculate energy consumption per kg of milk powder....
