It is being operated in a four-shift pattern throughout the year. 60 new jobs have been created. The basis for the whey processing plant is, however, the cheesemaking operation of Hochwald in Hünfeld that employs a staff of 200 and itself has been modernised with an investment of €25m since 2011 to turn 400m kg of milk into Mozzarella and Pasta filata cheeses. Technical innovation is by the way one of the characteristics of the Hünfeld operations of Hochwald. Currently, the waste water treatment is being equipped with a patented new process that allows for separating waste water loads for re-use for instance as fertiliser. The system is in principle an efficient hygienic sluice that fills the Big Bag on one side in the high care zone which is then passed in a revolving operation through the wall into the packaging and dispatch area. It is only then when the Big Bag is placed onto a pallet. In between the two hygiene zones (white, black) there is a horizontal rolling gate to keep hygienic conditions in the white zone to standards.
